Variation on gourmet turkey meatloaf

Tonight I made a turkey meatloaf again. No pictures today. When I cook these days I do things fast and furiously as I can’t stand for long. So no time to set up pretty pictures.

BUT! This turned out so good I wanted to share it.

Ingredients:

1lb ground turkey

1 cup parmesan or other hard Italian grated cheese

3 eggs

2 cups brown rice

1/2 a cup of kalamata olive tapenade (the secret ingredient)

1 onion diced into tiny pieces and browned until very soft and then cooled for a bit

3 cloves diced garlic

1/2 cup milk

lots and lots of fresh ground pepper (I did not add salt as the tapenade and cheese have lots of salt)

Brown the onion ahead of time and throw all the other ingredients together. Mix well and put in loaf pan. Bake at 350 for 45 minutes or so.

    Sounds good, and I love the addition of olive tapenade. I bet this is super tasty!

    Never had a turkey meatloaf, This sounds mighty tasty! Great twist on a classic.

    At least you cook these days! I haven’t done so since life got… interesting about two months ago.

    This – kalamata olive tapenade – looks like an interesting add to the mix. Something I never would have thought of. Is the taste a subtle add?

    Glad to see you back! That sounds good and very healthy. The turkey and rice….nice choices. I lost another pound (surprisingly) and am looking at healthier choices. But sometimes it’s hard :-)

    Olive tapenade, huh? I bet that adds some nice depth to it. It looks great, if my girlfriend would eat -loaf I would make it tonight. I’ll have to wait till the next time she’s out. Heh.

    well, honestly…this is unlike any traditional meatloaf…it’s more like gourmet turkey sausages…

    call it something else…

    I cook it in a square pan?? maybe that will help?

    I suppose it looks too much like meatloaf in any case…but I think many people who think of diner meatloaf would find this altogether a different animal…

    but then again, I like diner meatloaf! but I’d eat this sort of meatloaf over diner meatloaf any day…

    well…I eat very clean and healthy and once it’s a habit it’s hard to go back actually…and eating healthy is hardly a sentence to bad food…it’s truly a sentence to the yummiest foods in my opinion!!

    once a habit of less healthy food is broken healthy food tastes better…to me anyway!!

    You know, this is a really good idea right here. Take this concept and make it into turkey burgers. Every once and awhile I’ll have a thought about trying something like that… and this is a good base for it.
