I have no idea what kind of beet I used!

I have used delightful ORANGE beets before and I've also tossed in goat cheese which is wonderful as well.

mixing orange and red would make it very colorful.

slicing would be nice...the texture change would bring out the other flavors...I like the idea, but I've not done it.

I was thinking about this dish as it reminded me of another roasted beet salad. Two questions for you...

1) What kind of beets did you use? Dark Red or Red Ace?

2) Have you ever made the salad except using very thin sliced instead of the cube cut?
