Oven-baked frittata-like thing

Demonstration of creating something out of nothing–a very humble creation, but a wholesome meal.

Was hungry tonight and didn’t have anything planned. I scouted the fridge and discovered various still fresh leftovers. I had steamed broccoli as well as steamed brown rice. I set out to make a frittata, but it turned out there was too much broccoli and rice and with six eggs I ended up with a very thick mixture that wouldn’t do well on the stove top so I figured I would bake it into a casserole. I added a few other things as well.

This was a super easy, fast preparation. If you’re so inclined I would first saute an onion and some fresh garlic and toss that in too. I simply was going for fast and easy though so I skipped that.

Here are the whole list of ingredients:

  • 3 cups cut up steamed broccoli
  • 2 cups brown rice
  • 6 eggs
  • 1 cup plain sheep milk yogurt
  • 3/4 cup sheep milk pecorino cheese grated
  • 1 tsp red pepper flakes
  • 1 tbls garlic powder
  • Salt

Put into baking dish and bake until browned.

    I once had a brilliant idea for a cooking show on Food Network: I’d go into people’s houses, inspect the contents of their refrigerators, then make a meal with their left over bits & pieces. I love this kind of cooking and improvisation!

    I have the same interest…people really don’t know how to do that and I think it’s a wonderful skill to have and that is why I posted this even though among us foodies it’s nothing….

    perhaps we should collaborate…

    Cheese and broccoli are possibly one of my favorite combinations of foods (yes I love those Green Giant microwaveable things and I am damn proud of it!). This looks absolutely delicious, whether it is a frittata or not or something in between. And I love the idea for that show you guys are talking about. I would totally watch it!

    Looks great, frittatas are the bomb. I think they used to have a show like that, but I can’t remember what it was called…
