I&#039;m not really a mushroom fan, but the filet sounds awesome. I&#039;m just getting into horseradish after years of not really wanting anything to do with it. I blame it on my father who is of the mind that anything that is good in small doses must also be good in enormous quantities.</description>

As for the mushrooms, for me, it depends on how they are going to be used.  If they are a side (such as this) I like them to be firm.  If they are a component of the dish, I like them soft.  =)

Excellent work, Van, I&#039;m going to have to try this.  I couldn&#039;t find fresh horseradish for a recent halibut I made but I know using fresh is always better.
